Asian-Style Prawns with Pumpkin Noodle Soup - Recipe

Foxes Den silky pumpkin soup turned up a notch. Loaded with juicy prawns sauteed in a vibrant red curry paste, slurp-worthy rice noodles, and a rich coconut curry swirl. Finished with fresh chilli, herbs, and just the right kick. This one’s bold and seriously craveable.

Ingredients (Serves 2) 

  • X1 Foxes Den Thai Pumpkin Soup  

  • X1 Packet Ash Bro prawn cutlets (raw, peeled with tail) or prawn meat 

     

  • 160g rice noodles (pad Thai style)  

  • 1- tbsp red curry paste (depending on spice tolerance) 

  • 200ml coconut cream  

  • 1 tbsp coconut oil 

Toppings 

  • 1 long red chilli, finely sliced  

  • 2 spring onions, sliced  

  • Fresh coriander leaves  

Method 

1. Prep the toppings 
Slice chilli, spring onion, and coriander leaves. Set aside. 

2. Heat the soup 
Heat Foxes Den Thai Pumpkin Soup according to package instructions  

3. Cook the noodles 
Prepare rice noodles as per packet instructions. Drain and set aside. 

4. Make the curry coconut sauce 
Heat coconut oil in a pan over medium heat. 
Add red curry paste and cook for 1–2 minutes until fragrant and looks like it is splitting. 

Pour in coconut cream and stir until smooth and lightly simmering. 

5. Cook the prawns 
Add prawn cutlets to the sauce. 
Cook for ~2 minutes per side, until just opaque and cooked through. 

Pour sauce into the thai pumpkin soup and mix, reserving prawns. 

To Serve 

Divide noodles between bowls. 
Pour over hot pumpkin soup mix, then add prawn cutlets . 

Finish with: 

  • Fresh chilli  

  • Spring onion  

  • Coriander  

  • Optional drizzle of coconut milk
