Foxes Den Raceday Sandwiches - Recipe

If you've known Foxes Den for a while, you know that our Raceday sandwiches had some magic about them. Whether it was catering for a crowd, a picnic on the beach, or grabbing a quick lunch, our original retail stores turned out hundreds of Raceday sandwiches. Made from a simple, classic recipe and perfected in true Foxes Den style, these chicken sandwiches are ideal for catering, kids’ lunchboxes, or a quick and easy snack. We recommend always keeping a stash of Raceday Mix in your fridge, so whenever you need a delicious fix in a hurry, all you have to do is add it to your favourite bread.

Ingredients (makes 8 sandwiches):

  • 500g cold, cooked, free range roast chook, picked and chopped (approx. 1 chook)
  • 2 large stalks celery, finely sliced
  • 250g free range egg mayonnaise
  • 4 units spring onion, white and very light green sections only, finely sliced.
  • Cracked black pepper
  • Sea salt flakes 
  • 16 slices (approx. 1 loaf) soft square white bread. Foxes Den uses Bakers Delight's white loaf.

Method:

1. Mix the chicken, mayo, celery and spring onion together in a bowl. 

2. Taste for seasoning, based on how much salt the chook had in its original cook, you may need to add from nothing, to a lot of salt and pepper.

3. Layout 8 squares and share the mix across each, making sure you spread to the edges.

4. Top with remaining 8 slices and cut into 4 triangles per sandwich using a bread knife. Enjoy
