Ingredients (Serves 2)

x1 pack Foxes Den Supergreen Soup

3 rashers Peter Bouchier bacon
-
1/4 loaf Irrewarra bread (We use Rustica sourdough ciabatta style)
Croutons
-
2 tbsp extra virgin olive oil
-
1 garlic clove, minced
-
1 tsp dried oregano
-
Salt and pepper
To Finish
-
100g stracciatella (We use That’s Amore!)

Fresh parsley, chopped
-
Extra virgin olive oil, for drizzling
Method
1. Make the croutons
Preheat oven to 200°C (fan forced).
Cut bread into ~3cm cubes and place in a bowl.
Add olive oil, garlic, oregano, salt, and pepper. Toss well to coat.
Spread onto a baking tray and bake for 10–15 minutes, until golden and crisp.
2. Cook the bacon
Dice bacon and place in a cold pan over medium heat.
Cook until the fat renders and the bacon becomes golden and crispy.
Remove and set aside.
3. Heat the soup
Heat Foxes Den Supergreen Soup according to package instructions.
To Serve
Ladle soup into bowls.
Top with:
