This delicious vegetarian style curry will satisfy your cravings. Hearty, with a little bit of a kick, this dish is perfect to spice things up in the kitchen while getting in your protein and veg!
You will need:
- One Foxes Den Thai Green Curry Simmer Sauce Pouch
- 1 inch Ginger
- 2 cloves of Garlic
- Oil
- 1 packet of extra firm tofu (450g)
- Vegetables - feel free to play around with the veggies and use what you have on hand. We recommend - onion, mushrooms, broccoli, red bell pepper, and snow peas.
Other vegetables you can add to green curry:
- cauliflower
- eggplant
- zucchini
- green beans
- carrot
- asparagus
- spinach
- For garnish (Optional): kaffir lime and Thai basil/ coriander and fresh lime
Method:
- Preheat a large, high-sided sauté pan over medium-low heat and add the oil. Once the pan is warm add the onion and mushrooms. Cook for about 3 minutes or until softened. Add the garlic, ginger, and cubed tofu. Cook for about 4 minutes, stirring occasionally.
- Add the red pepper, broccoli, and snow peas (and any other veg you would like to add) and cook for about 2 minutes.
- Add the Thai Green Simmer Sauce and bring to a low boil. Reduce to a simmer, and cook for 4-6 minutes or until the sauce has thickened and the vegetables are crisp-tender.
We enjoy jasmine rice with this saucy green curry, but brown rice is great if you prefer whole grains.
Kaffir lime and Thai basil are more traditional garnishes, but coriander and plain old lime juice are also delicious
