Healing Chicken Soup - Recipe

Made with a whole chicken gently cooked in rich stock and fresh thyme, then finished with finely chopped vegetables, tender greens, and delicate strands of pasta. Light yet satisfying, this is a clean, wholesome bowl of goodness — soothing, warming, and perfect for when your body needs a little extra care.

Serves 6

Ingredients:

  • 1 smallish whole chicken (approx. 1.2kg)
  • 2.5L chicken stock (may need slightly more)
  • 12 sprigs thyme
  • 1 tbs olive oil
  • 1 stick celery, fine dice
  • 1 brown onion, fine dice
  • 150g carrots, fine dice
  • 2 units garlic, fine dice
  • 180g zucchini, grated
  • 50g kale leaves, (after stripping stalks), fine slice 
  • 100g spaghetti, broken into 1/4's
  • Sea salt flakes
  • Cracked pepper

Method:

1 - Place the raw chicken into a large pot, add the chicken stock (add additional stock if needed to almost cover the bird ) and 6 of the thyme sprigs. Put a lid on and bring to a boil. Reduce heat and simmer for 45 minutes.

2- Using tongs, remove the chicken from the stock and confirm it is cooked through. If it is cooked, then allow to cool until room temperature and shred all meat off bones. 

3 -Check the broth, strain if necessary to remove any odds and ends. Put aside.

4 - In a separate pot, cook the spaghetti as per packet instructions. Once cooked, drain and rinse under cold water.

5- In the same large pot as the broth was made, add the oil and sweat the celery, onion, carrot and half the garlic until translucent.

6- Add stock back and bring to the boil. Add Kale, remaining garlic, zucchini and remaining thyme. Simmer for 5 minutes.

7 - Add shredded chicken, cooked pasta. Simmer for 5 minutes. Taste and season with sea salt and generous pepper.
