Butter Chicken Pie

An easy weeknight meal made a little fancy! Turn classic butter chicken into a pie using our Butter Chicken Simmer Sauce.

You will need:

  • Foxes Den Butter Chicken Simmer Sauce pouch
  • Oil 
  • 4 chicken thigh fillets, cut into small chunks
  • 1 brown onion, chopped
  • 3 garlic cloves, crushed
  • 3cm piece fresh ginger, finely grated
  • 1/2 cup frozen peas
  • 2 tbsp roughly chopped fresh coriander leaves
  • 2 sheets frozen puff pastry, partially thawed
  • 1 egg, lightly beaten

Method:

  1. Preheat oven to 220C degrees/ 200C degrees fan forced
  2. Heat oil in a pan and add chicken. Cook for 3 minutes or until lightly browned. Reduce heat and add onion, stirring for 4 minutes or until well browned. Add garlic and ginger and cook until fragrant.
  3. Pour in Foxes Den Butter Chicken Simmer Sauce, bringing to a boil, stir in peas and coriander and simmer for a further 2 mins. Turn off heat and let cool for 10 mins
  4. Line a greased pie dish with a sheet of pastry and pour in butter chicken mixture. Carefully place a pastry sheet on top of pie, folding excess pastry over edge of dish to seal. Brush top with egg. Bake for 25 minutes or until pastry is golden and puffed. Stand for 10 minutes.
