A melt in your mouth fish dish that leaves the tastebuds tingling. Authentic Thai flavours and succulent fish makes this combo a divine addition to your kitchen this week.
You will need:
- Foxes Den Thai Green Curry Simmer Sauce
- White fish: Any firm ocean white fish will work well here (sea bass, cod, barramundi, snapper, flathead, whiting). Thicker cuts are best!
- Lime: You’ll need both zest and juice to infuse the fish with a tangy, citrusy aroma.
- Onion (red, white, or yellow)
- Garlic minced
- Vegetables (add whatever you would like) we recommend: Carrots, potatoes, capsicum, green beans, asparagus, sugar snap peas, or snow peas. You can also add cauliflower, pak choy, zucchini, or any dark leafy greens
- Fresh herbs: Coriander, spring onion, Thai basil
- For some heat: fresh hot chilies

Prep the fish. Cut into large 2-inch chunks, pat dry, and place in a bowl. Season with salt, lime zest from one lime, and 1 tablespoon lime juice. Massage gently.

Sauté onion and garlic in pre heated pan with olive oil. over medium heat. Add i any veggies you would like to add and stir for 2 mins.

Pour over Foxes Den Thai Green Curry Simmer Sauce. Cover and simmer for 5 minutes until veggies are tender.

Add in fish and simmer over medium low heat. If the curry seems too thick, you ca add water or fish stock.

Sprinkle with Thai basil, coriander and spring onion (chilli is optional) and serve with lime wedges over rice.
