Thai Green Prawn Curry

Thai Green Prawn Curry

A fresh and delicious curry that is sure to be a family favourite. This dish can be prepared in 15 mins, the perfect weeknight dinner that will nourish your family or impress your dinner guests. 

Ingredients

  • Foxes Den Thai Green Simmer Sauce pouch
  • Oil for frying
  • 300g peeled raw king prawns (defrosted if frozen)
  • 2 onions, finely sliced
  • 1 red chilli, sliced
  • 20g fresh ginger, grated
  • 1 head broccoli, cut into florets
  • 2 bok choy, sliced
  • Grated zest lime, plus wedges or halves to serve
  • Fresh coriander, chopped

Method 

  1. Pour 1 tablespoon for olive oil into the pan on a medium heat. Fry off the onion until it begins to soften, add ginger and chilli and fry for 2 mins before adding the broccoli, stir-fry for 3-4 mins. 
  2. Add the prawns, Foxes Den Green Curry Simmer Sauce, pak choi, lime zest, and simmer for 5-6 minutes. 
  3. Garnish with fresh coriander, and serve with steamed jasmine rice and lime wedges
